In Los Angeles, it is more than possible to trace the long history of sushi back to Kaatsu on Hill Hurst, the influential sushi bar which captured everybody’s imagination in the late 1980s, and to Matsushiba, the very first modest Beverly Hills restaurant. Famous chef Onodera has worked at both restaurants.

At Mori Sushi, he carefully follows his very own muse, not that of Nobu. And in the 3 years ever since it opened, his sushi restaurant has gone from strength to strength to become one of the best in the city packed with top sushi bars. It does work and it’s his. He’s always there for everyone behind the counter, with a massive smile, but unlike many sushi chefs he is a fan of hyperactive shouting. He friendly chats with regular sushi eaters. It’s extremely comfortable for everyone.

Here, the waiting staff are highly courteous and on top of that extremely helpful, announcing with the skill of a Patina waiter the dishes, and even going the extra mile by consulting a Japanese-English dictionary or the chef himself, for the precise translation of a less than familiar fish or ingredient.
