A three-time James Beard nominee, Chef Shiiro Kashiba has been exclusively profiled in all the major cuisine periodicals and newspapers, including the New York Times, Bon Appetite, and USA Today. His sushi restaurants are also featured in the famous Zagat’s restaurant guide.
Born and brought up in traditional Kyoto, Shiro packed his bags in his youth and trained with the various cookery masters on the famed Ginza in Tokyo. Several years of apprenticeships, coupled with early morning battles at multiple fish markets in Tokyo, infused Shiro with the determination and passion to use only the best and freshest ingredients and decline to serve his patrons with any substandard dish.
At Shiro’s Sushi, some of the finest sushi is served by one of the best sushi chefs found in Seattle. Kashiba professionally turns out crisp fish cuts and hand-rolls so much flourish. The sushi dinner here covers the very basics, but it’s also more than rewarding to sample from the classic sushi list. It is the fine food which commands the entire attention of customers. A selection of beer, wine and sake is also available.
